    We use MediaWiki (mediawiki.org), which was written for Wikipedia. It works pretty well and there are ton of plugins.

    There's a bunch of web-based wikis that work well too, check out a comparison at http://www.wikimatrix.org/.

    If you're releasing code via open source, definitely check out Project Hosting at Google Code (http://code.google.com/hosting/).
